Herby Falafel Fritters with Sumac and Tomato Dressing

Deliciously green with vegetables and herbs, these pan-fried falafel fritters become golden patties of goodness for a virtuous dinnertime treat. If you feel so inclined, you can pop these fritters, leaves and the dressing in a bun for a healthy burger.

Prepare Aromatics

Rinse and finely chop coriander leaves and stems and spring onions. Finely zest lemon and juice ½ the lemon. Cut remaining lemon into wedges. Coarsely grate zucchini.

Make Falafel

Drain and rinse chickpeas and place in a large bowl. Use a fork or a potato masher to crush well. Add coriander, lemon zest and juice, spring onion, Zaatar Bazaar, flour, 1½ teaspoons sumac and tahini and mix well to combine. Season well with salt and pepper.

Shape Falafel

Using clean hands, shape falafel mixture into 4 equal-size patties. Place on a plate and refrigerate until ready to cook.

Make Dressing

Coarsely grate tomato into a bowl. Add red wine vinegar, 20ml (1 tablespoon) olive oil, remaining sumac, salt and pepper and mix to combine.

Cook Falafel

Heat remaining olive oil in a large frypan over medium heat. Add falafel fritters, in batches, if necessary, and cook for 4 minutes each side or until golden and cooked through. Drain on paper towel.

Plate Up

Divide falafel fritters and salad leaves between plates and drizzle with tomato dressing. Serve with lemon wedges.
