Tray-Roasted Chicken Saltimbocca

This one-pan midweek dinner brings together classic Italian flavours of sage and prosciutto with sweet and sticky roasted pears. Add a peppery rocket salad and a squeeze of lemon to lift and lighten.

Prepare Chicken

Preheat oven to 220°C fan-forced. Slice chicken fillet in half horizontally to make 2 thinner fillets.

Wrap Chicken

Place a slice of prosciutto on a chopping board. Top with a piece of chicken and 2 sage leaves and season with salt and pepper. Wrap prosciutto around chicken and place, seam-side down, on a tray. Repeat with remaining prosciutto, chicken and sage leaves. Set aside.

Roast Pears

Cut pear into wedges. Place pear on a lined baking tray and drizzle with maple syrup and 2 teaspoons oil. Bake for 5 minutes.

Add Chicken

Add chicken to the tray with pears. Roast for 10 minutes or until chicken is cooked through and pears have caramelised.

Make Salad

Juice ½ the lemon and cut remaining lemon into wedges. Place lemon juice and remaining olive oil in a bowl with rocket leaves and toss to combine. Drizzle over any pan juices from the chicken.

Plate Up

Divide chicken between plates and top rocket salad and pear. Serve with lemon wedges.
