Pork and Feta Rissoles with Risoni Salad

Fresh and simple pasta salad is tossed with a zesty and herby dressing and topped with delicious pork and feta rissoles. You could cook the rissoles on the barbecue for a lovely, smoky flavour, if you prefer.

Make Rissoles

Place a saucepan of salted water over high heat and bring to boil for the risoni. Pick oregano leaves and roughly chop. Crumble feta. Remove sausage meat from casings, discarding casings. Place meat in a bowl with 1/2 the chopped oregano, 1/2 the crumbled feta and a pinch of black pepper. Mix well to combine and shape into 4 equal-sized rissoles.



Cook Pasta

Once the water is boiling, cook risoni for 8 minutes or until tender. Drain and set aside. While the risoni is cooking, continue to step 3.



Make Dressing

Peel and finely chop garlic. Finely zest and juice lemon. Place garlic, remaining oregano, lemon zest and juice in a bowl with 2 teaspoons olive oil, season with salt and pepper and stir to combine.



Prepare Vegetables

Halve cherry tomatoes. Chop cucumber. Remove seeds from capsicum and thinly slice. Roughly chop olives.



Cook Capsicum and Rissoles

Heat 1 teaspoon oil in a medium frypan over medium heat. Add capsicum and cook for 2-3 minutes or until softened. Remove from pan. Add remaining oil and rissoles to frypan, pressing rissoles to flatten slightly. Cook for 4-5 minutes, turning halfway, until golden brown and cooked through.



Plate Up

Place tomato, cucumber, cooked capsicum, olives and remaining feta in a bowl with risoni and dressing, season to taste and toss to combine. Divide pasta salad between bowls and top with rissoles.
