Pork and Shallot Dumplings with Mushrooms and Greens Soup

What's that bright light? Oh, that's just your halo, looking extra shiny thanks to this veggie-packed, clean and green broth. Being virtuous doesn't mean missing out on flavour, though, and these pillowy, silky and porky dumplings prove it. This can only be improved by the addition of your favourite chilli condiment, if that's your vibe.

Prepare Ingredients

Remove woody stem from shiitake mushrooms and discard stems. Thickly slice mushrooms. Finely slice spring onion. Thinly slice ginger. Rinse bok choy and chop into bite-sized pieces.

Cook Mushrooms

Heat a medium saucepan over medium heat. Add butter to saucepan and heat until bubbling. Add shiitake mushroom and a sprinkle of salt and cook, stirring frequently, for 2–3 minutes or until caramelised.

Add Soy Sauce and Ginger

Add ginger and soy sauce and stir to combine. Cook, stirring, for 30 seconds or until soy sauce has slightly reduced.

Cook Broth

Add teriyaki sauce, 625ml (2½ cups) water, stock cube and sesame oil and bring to a simmer. Cook for 4–5 minutes to marry flavours in the broth.

Microwave Dumplings

Cook dumplings in microwavable according to packet instructions.

Plate Up

Remove ginger from broth. Stir through bok choy until just wilted. Divide broth, vegetables and dumplings between bowls and top with spring onion.
