Sticky Beef and Creamy Slaw Tacos

Smoky and creamy, sticky and sweet, these quick-cook tacos are a flavour hit to liven up your weeknight. Topped with cooling cucumber and a squeeze of lime, they'll be devoured in half the time it takes to cook them.

Prepare Slaw

Thinly slice cabbage and spring onion and place in a bowl. Add aioli and cheddar, season with salt and pepper and toss to combine. Set aside.

Make Marinade

Place tomato ketchup, ½ the Subtly Smoky Chipotle, brown sugar and 60ml (¼ cup) water in a small bowl and mix to combine.

Cook Beef

Heat a frypan over medium-high heat. Add oil and beef and cook, stirring, for 3 minutes or until beef is caramelised and cooked through. Add marinade and cook for 2–3 minutes or until sauce has thickened.

Make Cucumber Salsa

Juice ½ the lime and cut remaining lime into wedges. Cut cucumber into 1cm pieces and place in bowl with remaining Subtly Smoky Chipotle, salt and pepper and lime juice.

Heat Tortillas

Heat tortillas in a large frypan over medium heat for 1 minute or until warmed through. Wrap in a tea towel to keep warm.

Plate Up

Divide slaw between tortillas and top with sticky beef and cucumber salsa to serve. Serve with lime wedges.
