Mild Turmeric Coconut Tofu Curry

Radiating virtue with its plant-based, turmeric-hued loveliness, this tofu curry is your invitation to polish up those clean-eating pledges. We're making it easy here with rich, coconutty flavour loaded up with aromatics. All you need to do is opt-in for meat-free deliciousness.

Cook Rice

Place rice and 310ml (1¼ cup) cold water in a saucepan over high heat and bring to the boil. Reduce heat to low, cover with a lid and cook for 15 minutes or until cooked through. Leave covered until ready to serve. While rice is cooking, continue with step 2.

Cook Tofu

Crumble tofu into 2cm pieces. Heat oil in a saucepan over medium-high heat. Add tofu and cook, turning occasionally, for 5–6 minutes or until crispy and caramelised. While tofu is cooking, continue with step 3.

Prepare Ingredients

Coarsely grate carrot on a box grater. Halve cherry tomatoes. Thinly slice spring onions. Finely grate ginger.

Add Aromatics and Tomatoes

Add turmeric, ginger and spring onion to frypan and cook for 30 seconds or until spring onion is softened and ginger is fragrant. Add tomatoes and cook, stirring, for 1–2 minutes or until softened slightly.

Cook Curry

Add carrot, coconut milk and 250ml (1 cup) water. Crumble in stock cube and bring to a simmer. Reduce heat to medium-low and cook for 8–10 minutes or until sauce is thickened slightly and carrot is cooked.

Plate Up

Trim snow peas and halve. Add to curry with soy sauce and cook for 1–2 minutes or until snow peas are tender but retain some bite. Season curry with salt and pepper. Slice lime into wedges. Divide rice between bowls and top with curry. Serve with lime wedges.
