Christmas Dessert Hacks #1: Fruit Mince Pie Ice-Cream Sandwiches
This delicious, hand-held festive treat is perfect for enjoying outdoors on Christmas Day as you watch a game of backyard cricket. You can use any of your favourite biscuits for this recipe.
Large dish, ice-cream scoop
2 litres vanilla ice-cream
1 x 410g jar fruit mince
16 round stem ginger or shortbread biscuits
Step 1: Make Ice-cream
Soften ice-cream by standing at room temperature for 5–10 minutes or placing in a stand mixer with a paddle attachment and beating for 1 minute or until softened. Add the fruit mince and gently stir to swirl through. Transfer to a dish and place in the freezer for 2 hours or until firm.
Step 2: Assemble Ice-cream Sandwiches
Place 1 scoop of ice-cream onto ½ the biscuits and sandwich with remaining biscuits. Eat immediately or return to the freezer until ready to serve.
