Easy Chicken Parmigiana with Salad

It's a perfect parmi. Nope, scrap that. It's a better-than-perfect parmi. What makes it so great is that you'll be sitting down to that golden, bubbling and saucy delight in just 20 minutes, real time. A slightly creamy, lightly pickled side salad also helps to push things into perfection.

Pickle Eschalot

Peel and slice eschalot into thin slices. Place in a bowl with lemon juice, salt and pepper and set aside to pickle slightly.

Cook Schnitzels

Preheat oven grill to high. Heat 20ml (1 tablespoon) oil in a frypan over medium heat. Add schnitzels and cook for 4 minutes each side or until golden and cooked through. While schnitzels are cooking, continue with step 3.

Make Sauce

Peel and crush garlic. Heat remaining oil in a frypan over medium heat. Add garlic, Italian Kitchen Herbs, sugar and tomatoes and cook for 3–4 minutes or until sauce has thickened. Season with salt and pepper.

Grill Cheese

Place schnitzels on a baking tray. Top with sauce and sprinkle with cheese. Place under grill for 3–4 minutes or until cheese is caramelised and chicken is cooked through.

Finish Salad

Slice cucumber into rounds and place in a bowl with sour cream, salad leaves, eschalot and any pickling liquid. Season well with salt and pepper.

Plate Up

Serve chicken parmigiana with salad on the side.
