Lamb burgers, sure. But lamb burgers with a Greek spin are something to properly geek out on. Slather fluffy buns with tzatziki and top with pan-fried oregano lamb, then crumble milky feta over your oven-baked chips. Yep, say it with us, Greece is the word.

Bake Chips

Preheat oven to 200°C fan-forced. Cut potatoes into wedges and place on a lined baking tray. Sprinkle with salt, ½ teaspoon oregano and drizzle with 2 teaspoons oil and toss to coat. Bake for 25 minutes or until golden. While chips are baking, continue with step 2.

Season Lamb

Place lamb steaks in a bowl with remaining oregano and oil and sprinkle with salt. Toss to coat.

Prepare Ingredients

Slice cucumber into thin rounds. Slice tomato into thick rounds and season with salt and pepper. Thinly slice spring onion. Add spring onion to tzatziki and stir to combine.

Cook Steaks

Heat a frypan over medium-high heat. Add lamb and cook for 3 minutes each side for medium-rare or until cooked to your liking. Remove from pan and set aside to rest while you continue with step 5. Wipe out pan.

Toast Buns

Return the clean frypan to medium-high heat and toast buns, cut-side down, for 1–2 minutes or until golden.

Plate Up

Slice steaks in half. Toss feta with chips. Spread tzatziki over buns and top bases with cucumber, steak and tomato. Replace bun tops and serve with chips.
