Grilled Chicken with Dill, Feta and Cucumber Salad

Marinate Chicken

Crush garlic. Slice chicken in half horizontally. Place most of the garlic, 2 teaspoons Italian seasoning, 40ml (2 tablespoons) red wine vinegar, 40ml (2 tablespoons) olive oil and chicken in a bowl and toss to coat chicken. Set aside to marinate for 10 minutes.

Make Feta Dressing

Place remaining red wine vinegar, remaining garlic, remaining Italian seasoning and remaining olive oil in a bowl. Crumble in the feta, season with salt and pepper and mix to combine.

Prepare Salad Ingredients

Chop lettuce into wedges. Slice radishes and dice cucumber. Finely slice spring onion.

Cook Chicken

Heat a medium chargrill or frypan over medium heat. Add chicken and cook for 6–8 minutes each side or until cooked through. Set aside to rest for 5 minutes.

Mix Salad

Chop dill and place in a large bowl with cucumber, spring onion and radish. Add feta dressing and mix to combine.

Plate Up

Divide lettuce between plates and pour over salad and dressing. Slice chicken and divide between plates to serve.
