Honey Soy Chicken Skewers with Sesame Greens

Shortcuts never tasted so good! We get to the point in just 30 minutes with these delicious, ready-to-cook honey-soy skewers. While they're caramelising in the pan, get cracking on a tangy, velvety tahini and sesame dressing, wilt some greens and, huzzah!, you're all set.

Cook Rice

Place rice and 310ml (1¼ cups) cold water in a saucepan over medium heat and bring to the boil. Reduce heat to low, cover with a lid and cook for 15 minutes or until cooked through. Set aside, covered, until ready to serve. While rice is cooking, continue with step 2.

Cook Skewers

Heat oil in a frypan over medium heat. Add skewers and cook, turning occasionally, for 8–10 minutes or until golden brown and cooked through. While skewers are cooking, continue with step 3.

Make Tahini Dressing

Bring a saucepan of water to the boil in preparation for step 5. Juice lime. Place tahini, lime juice, sesame seeds, soy sauce and 20ml (1 tablespoon) water in a bowl and mix to combine. Set aside.

Prepare Greens

Trim ends from broccolini and halve. Place baby spinach leaves in a colander in the sink.

Cook Greens

Once the water is boiling add broccolini and cook for 2 minutes or until just tender. Drain broccolini over spinach to wilt.

Plate Up

Toss broccolini and spinach with tahini lime dressing. Divide rice, skewers and greens between plates to serve.
