Hot-Smoked Salmon and Avocado Brown Rice Bowl

Cook Rice

Place rice in a large saucepan over high heat and cover with water. Bring to the boil, reduce heat to medium-low and simmer for 25 minutes or until tender. Drain.

Make Dressing

Peel and finely grate ginger. Place in a small bowl with soy sauce, mirin, rice wine vinegar and sesame seeds and stir to combine.

Season Rice

Pour half the dressing over rice and toss well to combine.

Prepare Fish

Remove skin from salmon and discard. Flake salmon into small pieces.

Prepare Vegetables

Trim fennel and cut into thick wedges. Peel avocado and cut into wedges. Pick coriander leaves from their stems.

Plate up

Divide rice between bowls. Top with spinach leaves, fennel, avocado and salmon. Scatter over coriander leaves and drizzle with remaining dressing to serve.
