Macaroni and Cheese with Salad

This classic warmer-upper is proper stick-to-your-ribs fare that will see you through a wintry hibernation with delicious cheesiness. Made in just one pan, it's best served with Netflix in cosy socks on the couch.

Cook Macaroni

Peel and crush garlic. Add macaroni, garlic, 400ml water and ½ teaspoon sea salt to an ovenproof frypan with a lid and bring to the boil over medium-high heat. Cover, reduce heat to low and simmer for 8 minutes.

Make Creamy Sauce

Meanwhile, place cornflour and 20ml (1 tablespoon) water in a bowl and stir until smooth. Add cream, Dijon mustard, parmesan, ½ the mozzarella, ¼ teaspoon salt and pepper and mix to combine.

Add Sauce

Preheat overhead grill to high. When macaroni is cooked, stir through butter and creamy sauce.

Add Crumb

Sprinkle panko breadcrumbs and remaining mozzarella over macaroni and place under grill for 6–7 minutes or until cheese and crumbs are golden.

Prepare Salad

Toss salad leaves with your favourite salad dressing.

Plate Up

Divide macaroni and cheese between bowls and serve with salad.
