One-Pan Garlic Butter Salmon with Warm Green Salad

Make Garlic Butter

Preheat oven to 200°C fan-forced. Finely grate garlic and place in a bowl with butter. Zest lemon and add zest to bowl. Pick thyme leaves from their stems and add to bowl with Dijon mustard, ½ teaspoon salt and a pinch cracked black pepper. Mix well to combine.

Prepare Vegetables

Slice broccolini stems in half lengthwise and slice asparagus into thirds. Place vegetables on a lined baking tray.

Bake Salmon and Vegetables

Place salmon on top of vegetables. Dot garlic butter around vegetables and on top of salmon. Bake for 10 minutes or until salmon is cooked to medium.

Rest Salmon, Make Salad

Once salmon is cooked to your liking, remove tray from oven and set salmon aside to rest. Place vegetables in a mixing bowl with lemon juice and pan juices. Add salad leaves and toss to combine.

Flake Salmon

Using a fork, flake salmon into large pieces.

Plate Up

Divide salad between plates and top with salmon to serve.
