One-Pot Pork Lasagne Soup

Love lasagne but have no time to make it? No problem. This warming soup is the best parts of lasagne transformed into a robust bowl of goodness with delicious pork flavour and silky lasagne sheets in a rich tomato broth. It's the answer to speedy comfort cooking.

Grate Vegetables

Using a box grater, coarsely grate onion and carrot. Crush garlic.

Cook Mince

Heat oil in a large saucepan over medium-high heat. Add pork mince and cook, breaking up with a spoon, for 8 minutes or until mince is browned. Add onion, garlic and carrot. Add one sprig each of rosemary and basil.Season with salt and pepper. Cook, stirring occasionally, for 4 minutes or until vegetables are softened and lightly coloured.

Add Liquids

Add tomatoes, chicken stock cube and 750ml (3 cups) water and bring to a rapid simmer. Cook for 10 minutes. Remove basil and rosemary sprigs and discard.

Add Lasagne Sheets

Break lasagne sheets into pieces, add to soup and, using tongs, move the pasta around in the soup to avoid the sheets sticking together.

Cook Soup

Cook for 10–12 minutes or until pasta is tender and soup has thickened slightly. Season with 1 teaspoon of sea salt and pepper to taste and divide soup between bowls.

Plate Up

Finely chop remaining rosemary and basil leaves. Sprinkle soup with parmesan and chopped herbs to serve.
