One-Tray Tex-Mex Pork Fajitas

It's the strips of meat, onion and capsicum that make a fajita, well, a fajita. Not to confuse you, but you can have a fajita taco, which is what we've got right here. What is crystal-clear, though, is that this Tex-Mex favourite is a hit with everyone around the dinner table, so wrap up and tuck in.

Prepare Vegetables

Preheat oven to 220°C. Remove core and seeds from capsicum. Cut capsicum into thin strips. Peel, halve and thinly slice onion.

Season Vegetables and Pork

Place capsicum, onion and pork on a baking tray and sprinkle with Tex Mex Mix Tape, salt and pepper and drizzle with oil. Toss well to coat.

Roast Pork

Transfer tray to oven and cook for 20 minutes or until vegetables are caramelised and pork is cooked through.

Add Corn

Drain corn, add to tray and toss to warm through.

Warm Tortillas

Wrap tortillas in foil and place in oven for 5 minutes or until warmed through.

Plate Up

Divide pork fajita mix between tortillas and top with sour cream and cheese to serve.
