Spicy Fish Spaghetti with Garlic, Lemon and Rocket

This zesty and spicy seafood pasta takes inspiration from the simple and fresh flavours of Italy’s Amalfi Coast.

Fry Breadcrumbs

Heat 20ml (1 tablespoon) olive oil in a non-stick frypan over medium heat. Add panko breadcrumbs and cook, stirring, for 3–4 minutes or until golden. Remove from pan and set aside.

Cook Fish

Wipe pan clean. Add remaining oil and place over high heat. Season fish with salt and pepper and add to pan. Cook for 3 minutes each side or until browned and cooked through. Remove from pan and allow to cool. When cool enough to handle, flake fish into large pieces.

Cook Aromatics

While fish is cooling, finely chop garlic and chilli and add to frypan. Cook, stirring, for 4–5 minutes or until tender and fragrant. Season with salt and pepper. Finely zest and juice lemon. Add zest to pan and reserve juice. Remove from heat.

Cook Pasta

Cook spaghetti in a large saucepan of boiling, salted water for 9 minutes or until al dente. Drain, reserving 30ml (1½ tablespoons) of the cooking water.

Mix Pasta

Return frypan to low heat. Add spaghetti, reserved cooking water and butter and stir to coat. Finely chop parsley and add to pan with flaked fish and lemon juice. Season with salt and pepper and cook for a further 1–2 minutes or until fish is heated through.

Plate Up

Remove from heat, stir through rocket leaves and divide between bowls. Sprinkle with crispy breadcrumbs to serve.
