Spicy Pork and Cabbage Ramen

Speedy, spicy and slurpable, this bowl of cheat's ramen delivers a big reward for minimal effort. It might be quick to make, but all the satisfying flavours of the classic, Japanese-style noodle soup are present and accounted for. Noodle slurping is encouraged.

Make Sauce

Finely grate ginger and crush garlic. Place ginger, garlic, gochujang, peanut butter, sesame oil and soy sauce in a small bowl and mix until combined.

Cook Noodles

Place noodles in a heatproof bowl and pour over boiling water. Set aside for 4 minutes to soften. Drain.

Prepare Vegetables

Remove core from cabbage and discard. Roughly chop cabbage. Thinly slice spring onions, keeping white and green parts separate. Rinse and drain corn.

Cook Pork and Vegetables

Heat a medium saucepan over medium heat. Add pork and cook, breaking up with a wooden spoon, for 5 minutes or until golden brown. Add cabbage and white spring onion and cook for 1 minute or until cabbage has softened.

Add Sauce

Stir through sauce and cook for 30 seconds. Add stock cube and 750ml (3 cups) water and bring to the boil. Reduce heat to medium-low and simmer for 5 minutes to infuse flavours.

Plate Up

Divide noodles between bowls. Spoon over pork and cabbage broth. Top with corn and green spring onion to serve.
