Sticky Pork Mince Fried Rice

This speedy and satisfying bowl of delicious pork and veg gets fast-tracked with the use of microwavable rice, meaning it's ready in just half-an-hour and is made in only one pan. Which, in turn, fast-tracks you to relaxing on the couch.

Prepare Ingredients

Thinly slice spring onion, keeping the white and green parts separate. Cut zucchini into 1cm pieces. Cut broccolini into 1cm pieces.

Cook Mince

Heat vegetable oil in a frypan over medium-high heat. Add pork mince and cook, breaking up with a wooden spoon, for 5–6 minutes or until golden brown.

Cook Vegetables

Add zucchini, broccolini, white spring onion and a pinch of salt to pan and cook, stirring, for 3–4 minutes or until vegetables are tender, but retain a little bite.

Add Rice

Add rice to pan and cook, stirring, for 1 minute or until grains have separated and are warmed through.

Add Sauce

Add hoisin, soy sauce and sesame oil to pan and stir to combine, making sure the rice is completely coated in sauce.

Plate Up

Divide fried rice between bowls and top with green spring onion to serve.
